Low Carb Banana Walnut Muffins
Well you know its true...our family loves muffins! So when the kids are having muffins for breakfast I make one of my low carb versions for myself. This one is an adaptation of our favourite banana chip muffin. You can skip the walnuts or the dark chocolate if you prefer. I like this recipe because it is moist and I don't feel like I am missing out on fresh baking!
Main Ingredients
3 medium bananas
3/4 cup almond milk
2 tbsp chia seeds
3 eggs
1 cup spelt flour
1/2 cup almond flour
1 tbsp baking powder
1 tsp pumpkin pie seasoning
3/4 cup sweetener-I used coconut palm sugar
pinch of salt
1/2 cup crushed walnuts
1/2 cup dark chocolate chips
Preparation
Step 1: Preheat oven to 400F.
Step 2: In a medium sized bowl mash the three ripe bananas until smooth. Add milk, eggs and chia seeds. Mix well. Set aside.
Step 3: In a larger bowl mix dry ingredients. Blend them together well. Slowly add banana mixture. Stir just to moisten.
Step 4: Add nuts and chocolate and stir to incorporate.
Step 5: Place in muffin tins and bake for 18-20 minutes.
