Lemon Blueberry Glazed Muffins
Summer time is almost here and that means all the good, fresh fruits and vegetables are just around the corner. I'm pretty sure I have a favourite muffin recipe to go with every kind of seasonal fruit I can get my hands on. Today we are enjoying fresh blueberries! Got them at the grocery store but they are local and fresh and so good! My kids love muffins for breakfast so when I have blueberries I make this one. I have made it with frozen blueberries too and it tastes just as wonderful.
The lemon glaze is optional of course but it adds a delicious sticky sweetness that really gives these muffins the wow factor. Also the lemon and blueberry combo is so perfect together. Bring on Summer!
Main Ingredients
2 cups all purpose flour
1/2 cup sugar
1 tbsp baking powder
1/4 cup oil-coconut works well
1 cup milk
1 egg
2 tsp lemon juice
1 cup blueberries fresh or frozen
pinch of salt
glaze:
1/4 cup icing sugar
2 tbsp lemon juice
Preparation
Step 1: Preheat oven to 400f.
Step 2: In a medium bowl cream together egg, oil and milk. Add lemon juice and set aside.
Step 3: In a larger bowl combine dry ingredients. Add wet ingredients to dry and mix just until moistened.
Step 4: Coat the blueberries with sifted flour. Toss into the batter and stir just to incorporate.
Step 5: Place in Muffin tins and bake for 18-20 minutes.
Step 6: Place on calling rack and allow to cool for 10 minutes.
Step 7: Meanwhile mix together the icing sugar and lemon juice. Drizzle over muffins while still warm.
