Savoury Beef Short Ribs

Well the calendar says Spring is here! I think Spring is being a little shy this year because I sure don't see it out my window yet...sigh. Either way...slow cooker season...I mean baseball season is upon us. We love baseball season around here, and this year three of my kids are playing. That means almost every weeknight we will be running to games and practices after school and things are going to be busy. So...that's why it's also slow cooker season. Anything I can dump in the slow cooker and come home after baseball to eat is a win in my books. I will be sharing a few of my favourites with you over the next few weeks.

Every year we buy our beef fresh from a local farm and butcher. It's one of my favourite things about living out here in the country;) I have had some cuts of beef that are new to me so I get to experiment with new recipes, yeah me!! This one I have worked on a few times and we really like it. Beef short ribs are not always easy to find at the grocery store, you may have to ask for them. They are quite chunky with big bones in them but don't let that put you off, I promise they are delicious and tender when cooked this way. Finger licking' delicious!

Main Ingredients

1 medium onion thinly sliced

4 cloves garlic - crushed

2 tbsp minced ginger ( or 1 tbsp powder)

1 cup beef broth

1/2 cup soya sauce

1/4 cup coconut sugar ( or brown sugar)

2 tbsp white wine vinegar

1 tbsp red chili paste (optional)

2 tbsp sesame oil

3 - 4 pounds beef short rubs

seasoning salt

canola oil

 

Preparation

Step 1: Cut the beef ribs into serving size portions. Not all the slices will have bone in them. Keep them chunky.

Step 2: Mix together first 9 ingredients for the sauce and then set aside.

Step 3: Heat a heavy skillet to medium heat and add canola oil, about 1-2 tbsp will be fine. Season the bottom of the pan with seasoning salt.

Step 4: Immediately place the beef ribs into the pan and sear on each side to brown meat. It takes about 1 minute per side. Do this in small batches so the meat can touch the pan evenly. Add oil and seasoning salt between batches as needed.

Step 5: Remove from pan with tongs and place meat in slow cooker.

Step 6: Once the meat is removed, with the pan still hot add all the sauce ingredients. Bring to a simmer and let simmer for 1-2 minutes, stirring occasionally.

Step 7: Pour the sauce over the ribs in the slow cooker.

Step 8: Set on low for 5-6 hours.

Step 9: Serve with rice and a salad.
