Peach cobbler

We are just loving these juicy peaches that we picked up while in the Okanagan. I have had way more than my fair share of peaches and cream. Sadly, fresh fruit doesn't last forever and these peaches are almost done. I am amazed that any lasted long enough to start to turn! I took the last few and made one of my favourite dessert, peach cobbler. Eating peach cobbler always reminds me of eating supper out in the field during harvest time. It was one of my grandmother's go to recipes and then my mothers. While I don't have the opportunity to take many meals out to the field, is till enjoy many of those traditional recipes, including this one! If you are lucky enough to have some fresh peaches give this recipe a try!

Main Ingredients

8 fresh peaches, peeled, pitted and sliced

1/4 cup white sugar

1/2 cup brown sugar

1/2 tsp cinnamon

2 tbsp corn starch

1 1/2 cup flour

1/4 cup white sugar

1/4 cup brown sugar

1 1/2 tsp baking powder

1/2 cup butter

1/2 cup boiling water

4 tablespoons white sugar

1 tsp cinnamon

 

Preparation

Step 1: preheat oven to 350F.

Step 2: Grease 9x13 cake pan.

Step 3: Mix peaches in a bowl with first amount of white sugar, brown sugar, cinnamon and cornstarch. Spread in cake pan.

Step 4: In a separate bowl mix flour, second amount of white sugar and brown sugar, and baking powder.

Step 5: Cut in butter and blend with a fork or pastry knife until crumbly.

Step 6: Add boiled water and mix just to moisten.

Step 7: Place by tablespoon over peaches until the whole top is covered.

Step 8: Sprinkle the top with cinnamon and sugar.

Step 9: Bake for 35 minutes.

Step 10: Serve warm with ice cream.
