Zucchini Spice Cake

I promised more zucchini recipes so here is one more. I can't believe it but our zucchinis are almost done! We have enjoyed every last one. Tried a few new recipes that I would love to get around to sharing including a zucchini lasagne. But first, let's talk about dessert. This cake is dense, moist and extra delicious with cream cheese frosting. Even my kids liked it;)

Main Ingredients

3 cups grated zucchini

3 cups all purpose flour

1 1/2 tsp baking soda

1 tsp baking powder

1 cup white sugar

1 cup brown sugar

1 tsp cinnamon

1 tsp pumpkin pie spice

1/2 tsp salt

4 Eggs 

1 cup plain yogurt

3/4 cup butter

3/4 cup milk

1 tsp vanilla

 

Preparation

Step 1: Preheat oven to 350F

Step 2: Mix dry ingredients in a large bowl and set aside.

Step 3: Soften butter in microwave. Add eggs and mix well. Add yogurt, milk and vanilla and whisk until smooth.

Step 4: Add grated zucchini to wet ingredients and stir.

Step 5: Mix all ingredients together. Scrape into 9x13 cake pan.

Step 6: Bake for 35 minutes.

Step 7: Allow to cool and frost with your favourite cream cheese icing.
