Pumpkin Spice Granola
Well folks it's that time of year again...time for pumpkin spice everything to hit the streets! I must admit I love this season! Fall is such a beautiful time of year and we are blessed to live in a land with such vivid seasons to look forward to. Each season brings it's own beauty and fun with it. Right now we are enjoying the rapidly ripening squash in our garden, including our pumpkins. Lately I have been on a granola craze and loving having it for breakfast every morning with my yogurt and some sliced fruit. We were able to bring back some fresh peaches, pears and cherries from our trip to the Okanagan and they are so good! So...fresh sliced peaches, yogurt, and this pumpkin granola. Amazing!
Main Ingredients
2 cups chopped pecans
1 cup chopped cashews
1 cup chopped almonds
1 cup rolled oats ( optional)
1 cup shredded coconut
1/2 cup pure maple syrup
1/2 cup pumpkin puree
1/4 cup coconut oil
1/2 tsp salt
1 tsp pumpkin pie spice
Preparation
Step 1: Preheat oven to 300 F.
Step 2: Line a baking sheet with parchment paper.
Step 3: Mix chopped nuts, oats and coconut in a bowl.
Step 4: In a separate bowl blend maple syrup, pumpkin, salt and pumpkin pie spice.
Step 5: Melt coconut oil in microwave and add to wet ingredients.
Step 6: Mix all ingredients together. Spread on cookie sheet.
Step 7: Bake for 15 minutes. Remove from oven, stir and put back in. Cook for another 15 minutes. Repeat until granola is toasty and dry.
