Summer Jelly Roll

Summer is already half over!  We have been fishing, camping and exploring for the last few weeks so I haven't had time to make any posts...too busy making memories;) #sorrynotsorry. I hope you are all having a wonderful summer as well. A few weeks ago for a summer BBQ I made this jelly roll. It's the perfect summer dessert. You can add any type of seasonal berry or fruit and it always tastes amazing. When I made it we had a fresh pick of raspberries from my mother in law's small orchard. It went really well with those and I loved the bright colour of the fruit against the light coloured cake.

This cake is pretty quick to make but does need to cool before you can put the whip cream on. Keep the dessert chilled until ready to serve. Enjoy and Happy August!

Main Ingredients

4 Eggs 

1/2 tsp salt

1 tsp vanilla

1 1/2 tsp baking powder

1 cup white sugar

1 cup all purpose flour

1 1/2 cups whipping cream

1/4 cup white sugar

 

Preparation

Step 1: Preheat oven to 400 F.

Step 2: Break eggs into a bowl. Add baking powder and salt. With hand held mixer, beat until frothy.

Step 3: Add sugar and beat until thick. Add vanilla and flour. Mix well.

Step 4: Pour batter into greased jelly roll pan.

Step 5: Bake for 10 minutes.

Step 6: While cake is baking lay a clean tea cloth out on the counter. Sprinkle the cloth with sugar.

Step 7: Remove cake from oven and allow to cool for 5 minutes.

 

Step 8: Gently remove cake from pan and lay on tea cloth. Roll up into a log.

Step 9: Allow to cool for 30 minutes.

 

Step 10: While cake is cooling whip cream. Add sugar.

Step 11: Unroll cake and spread with whip cream and fresh berries.

Step 12: Slice into pieces. Chill until ready to serve.
