Frosted Cashew Cookies
These cookies are a little nutty! I guess we are all a little nutty sometimes;) Seriously tho, these are so good! A soft, nutty cookie with a creamy maple frosting. I love the taste of salted cashews so this cookie has been a favourite of mine for a long time. Go ahead and give it a try this weekend.
I made a batch for us to enjoy around the campfire this evening...IF the wind dies down! We are celebrating the end of the school year here with a BBQ, baseball and bonfire...(that's a lot of B's)...complete with an ice cream sundae bar!
Homemade hot fudge and caramel sauce really complete the display don't yah think? MMMmmm...anyways, this blog is about the cookies so here we go!
Main Ingredients
1 cup packed brown sugar
1/2 cup butter
1/2 tsp vanilla
1 Egg
2 cups all purpose flour
3/4 tsp baking powder
3/4 tsp baking soda
1/3 cup sour cream
3/4 cup coarsely chopped cashews
frosting:
1/2 cup butter
2 cups powdered sugar
3 tbsp milk
1 tbsp almond butter ( optional)
1/2 tsp maple extract
Preparation
Step 1: Preheat oven to 375F.
Step 2: Cream together butter, vanilla, brown sugar and egg.
Step 3: Add sour cream and mix well.
Step 4: Add dry ingredients and mix.
Step 5: Add crushed cashews.
Step 6: Drop by teaspoon onto cookie sheet and bake for 10 minutes.
Step 7: Frosting:
Step 8: Mix together softened butter, icing sugar, milk, almond butter and extract. Blend until smooth.
Step 9: Once cookies are cooled frost each one with icing.
