Sesame Glazed Carrot Fries

I don't know about you but I can't wait for fresh vegetables from the garden! I am dreaming of fresh carrots, beans and potatoes right now...yummy! One of my favourite ways to have fresh vegetables is oven roasted. There are so many ways you can change them up and make delicious new dishes! While we wait for our gardens to come up, here is a lovely recipe for a carrot and parsnip side dish. If you don't like parsnip you can make it with just the carrots. A yummy week day side dish!

Main Ingredients

6 Large carrots

4 Large parsnips

2 tbsp olive oil

1 tbsp soya sauce

1 tbsp sesame oil

sesame seeds

1/2 tsp ground ginger

salt

 

Preparation

Step 1: Preheat oven to 400F.

Step 2: Line a cookie sheet with aluminum foil.

Step 3: Wash and peel carrots. Slice into thin sticks. Repeat with parsnips.

Step 4: In a small bowl combine olive oil, sesame oil, soya sauce, ginger and salt.

Step 5: Toss carrots and parsnips in oil mixture.

Step 6: Spread on cookie sheet and sprinkle carrots with sesame seeds.

Step 7: Bake for 25 minutes. Take out of the oven and stir.

Step 8: Bake an additional 15 minutes or until vegetables are cooked to desired tenderness.
