Coca-cola Bbq Ribs

Trying to decide what to have on your Father's Day menu? Give these grilled ribs a try! Marinated overnight in cola makes them soft. Then they are slow cooked in the oven for that fall off the bone tenderness, and finally grilled for the crunchy, saucy outside and the sealed in flavour. Some of the best homemade ribs you will ever try! Serve with last weeks loaded baked potato salad. 

Main Ingredients

2 cans cola

1 large yellow onion

4 cloves garlic

4 pounds ribs

1/2 cup butter

1 cup ketchup

2 tbsp onion flakes

1 tsp garlic salt

2 tbsp yellow mustard

1/2 cup brown sugar

2 tsp worcestershire sauce

salt

2 tbsp cornstarch

 

Preparation

Step 1: To prepare your meat make sure it is thawed. Remove skin off the bone side of the rib rack.

Step 2: Pierce meat with a fork in several places all down the rack.

Step 3: Dice onion into small pieces. Divide in half. Set half of the onion aside and place half in a small bowl. Crush garlic cloves and add to onion. Add 1 can of coke to the onion.

Step 4: Pour mixture over ribs and allow to marinate in the refrigerator for minimum 6 hours. I often do this step the night before and leave the ribs to marinate overnight.

Step 5: Once ribs have marinated preheat oven to 350F.

Step 6: In a heavy sauce pan add the butter and the remaining half of onion. Sauté until onion is soft. Add cola, ketchup, onion flakes, garlic salt, mustard, brown sugar, worcestershire sauce and salt.

Step 7: Stir over medium heat until mixture begins to boil.

Step 8: Whisk cornstarch with about 3 tbsp cold water. Combine until smooth and no lumps remain. Add to sauce.

Step 9: Boil sauce for 1 minute.

Step 10: Take ribs out of the refrigerator and drain marinade off. Place in a heavy roaster and cover in sauce.

Step 11: Bake covered for 2.5 to 3 hours. If your oven is hotter you might need to adjust cook times.

Step 12: Right before serving place ribs on a hot BBQ or grill. Grill about 3 minutes per side.
