Jam Jem Cookies
I have a vivid memory from my childhood having a backyard picnic with these cookies on the menu. I was playing outside with my dolls and had spread out a blanket for us all to sit on. We were using imaginary food of course and enjoying the sunshine. At some point my mother came out, bearing a plate of these cookies, fresh baked. They tasted so good! Sitting outside in the sun, sharing blanket with my imaginary friends and eating these delicious, fresh cookies. A wonderful memory that comes to mind overtime I make these.
My kids love these cookies and so now I get to back them for my own children. Family traditions carried on! Today I am sharing this recipe with you. Perhaps you can start a family tradition of your own!
These cookies are a soft, brown sugar cookie cut into rounds and baked, then spread with your favourite kind of jam or jelly. These ones have homemade chokecherry jelly on them. I prefer the darker jams and jellies on these cookies.
Main Ingredients
2 cups brown sugar
2 Eggs
1 tsp vanilla
1 tsp baking soda
4 cups all purpose flour
1 cup butter
1/4 tsp salt
1 tsp baking soda dissolved in 3 tbsp water
fruit jam or jelly
Preparation
Step 1: Preheat oven to 350F.
Step 2: In a small cup place baking soda in water. Stir and set aside.
Step 3: Combine Brown sugar, eggs and softened butter. Beat well until smooth.
Step 4: Add baking soda/water mix.
Step 5: Add the rest of the ingredients. Mix well.
Step 6: Roll dough out onto lightly floured surface. Roll to 1/4 inch thickness.
Step 7: Cut out circles with a donut cutter or a glass cup.
Step 8: Place on cookie sheet and bake for 10 minutes.
Step 9: Cool cookies on wire baking rack.
Step 10: Once cookies are cooled off spread 1/2 tsp jam in between two cookies.
