Sweet and Salty Granola
I am super excited today! We are heading to the mountains. My handsome hubby and I are set to do some hiking and rock climbing in beautiful Canmore, Ab. I have hiked and climbed before but this is my first time climbing with a training group. Hoping to learn lots of new things and take some amazing pictures. This recipe is for a tasty granola that we always make and pack when we go on our outdoor excursions. It's filling, packed with protein and super tasty! This makes it a great choice for taking along when you need to pack light, eat food that gives you energy and want something tasty too!
Main Ingredients
1/2 cup chopped walnuts
1/2 cup chopped pecans
1/2 cup chopped almonds
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1 tbsp coconut oil
1 tsp vanilla
1/2 tsp cinnamon
1/2 teaspoon nutmeg
1 tsp sea salt
1/4 cup honey
1/2 cup chopped dried apricots
1/2 cup dried cranberries
Preparation
Step 1: Preheat oven to 325F
Step 2: In a large bowl mix together nuts and seeds.
Step 3: In a microwave safe bowl melt coconut oil. Add honey and mix well.
Step 4:Add vanilla, salt and spices.
Step 5: Pour over nuts and seeds and mix well.
Step 6: Layer a cookie sheet with parchment paper and spread granola out on it.
Step 7: Bake at 325 for 10 minutes. Take out and stir and then cook for another 10 minutes. Granola should be golden brown and bubbly.
Step 8: Add the chopped, dried fruit and mix up on the pan. Allow to cool.
Step 9: Store in an airtight container for up to 2 weeks.
