Crab Pasta Bake

I looked out my window this morning and saw a drab, grey sky. No bright sun peeking in to get me motivated this midweek day...sigh. I guess I will have to rely on an extra cup of coffee and mental kick in the pants to get me going ;) It's one of those days where I need to prepare supper early so I can stick it in the fridge and pop it in the oven when we are ready to eat. This casserole is perfect for that. It's comfort food at it's finest...like Kraft Dinner but for grown ups. If you don't have canned crab on hand you can substitute chicken. Either way it's delicious!

Main Ingredients

1 Box macaroni or other noodles ( about 2 cups dry)

boiling water

salt

2 tsp butter

1/2 cup chopped onion

8 oz pkg cream cheese

1 cup sour cream

1/2 cup cottage cheese

2 4.5 oz cans of crab

1 tsp onion salt

1/2 tsp seasoning salt

1/4 cup milk

1 cup grated cheddar cheese

1 cup bread crumbs

3 tbsp butter

 

Preparation

Step 1: Preheat oven to 350F

Step 2: Cook noodles in salted boiling water for 5 to 7 minutes. You want the noodles tender but firm. Drain and set aside.

Step 3: Melt first amount of butter in saucepan, add chopped onion and sauté until soft.

Step 4: In a separate bowl cream together cream cheese, sour cream, milk, onion salt and seasoning salt.

Step 5: Blend cottage cheese in blender until pureed. Add to cream cheese mixture.

Step 6: Add cream sauce to fry pan with onions. Heat over medium heat until just boiling, stirring continuously.

 

Step 7: Add cheddar cheese and mix to incorporate.

Step 8: Combine cheese sauce and crab with noodles. Transfer to a greased 2L casserole dish.

Step 9: Melt second amount of butter in microwave. Add bread crumbs and mix well.

Step 10: Sprinkle over the top of the casserole.

Step 11: Bake at 350F for 30-40 min.
