Lunch Box Granola Bars
Tired of trying to think of things to keep those lunch boxes full? Yeah...me too! How about these chewy, chocolaty granola bars? My kids love them! I have tried quite a few granola bar recipes...way too many to mention! Some didn't stay together well, some were too crunchy, some the kids didn't like and some I didn't like. My kids like Quaker Dipps bars, and while I don't mind buying them on occasion I prefer to make things at home when I can. So after a fair amount of trial and error we finally have a granola bar that the whole family loves. It stays together perfectly in the lunchbox. We pack these in lunch boxes, on picnics, and any time we travel (which is a lot). Hope you enjoy them!
Main Ingredients
3/4 cup butter
1 cup brown sugar
2 cups rolled oats
1 cup rice krispies or other cereal
1/2 cup corn syrup
1/2 cup peanut butter
3/4 cup flour
2 cups chocolate chips
Preparation
Step 1: Preheat oven to 350 F. Soften butter in the microwave.
Step 2: Add brown sugar, corn syrup and peanut butter. Mix well.
Step 3: Add rolled oats, rice krispies and flour.
Step 4: With a wooden spoon mix well, making sure to mix right to the bottom of the bowl.
Step 5: Press into a greased 9x13 cake pan. Bake for 20 minutes.
Step 6: In a glass bowl, melt chocolate chips in microwave.
Step 7: Using a spatula, gently spread chocolate over the top of the granola mixture.
Step 8: Refrigerate for 20 minutes then cut into slices. I like to wrap them in plastic wrap and store them in an airtight container. That way they are ready to grab on the go!
