Roasted Radish with Chives

Have the monday blues? Here is an easy side dish to make tonight. If you are trying to eat low carb and stay on track this week this recipe will be a great addition to your meal. Did you know you can use radishes in place of potato in your meal? They taste amazing! I was skeptical at first too, but after I tried them once I was hooked! When you bake radishes the spicy flavour becomes mild leaving you with a sweet and savoury flavour. Sounds good to me!

Main Ingredients

4 cups chopped red radishes

1/4 cup olive oil

1/4 cup chopped chives

salt

 

Preparation

Step 1: Preheat oven to 350F.

Step 2: Place chopped radishes in 2L casserole dish.

Step 3: Coat with olive oil.

Step 4: Sprinkle with chives and salt. Mix well.

Step 5: Bake for 30-40 minutes. Until soft when poked with a fork.
