Beef Roll Up

So this morning my 5 year old asks me," Why is a comb called a comb when you don't even brush my hair with it? You comb my hair with a brush so a brush should be called a comb!" I have no idea either. Faced with questions like these before I have even had a cup of coffee is daunting. I am not a morning person and my brain is not in full gear until about half hour after I have had my coffee so I am afraid I didn't have an answer for her this time. I'm trying not to think about it too hard even now because it's making my brain go around and around in a dizzying fashion...why is a comb called a comb and a brush a brush? What's the difference between brushing my hair and combing my hair? Should we brush our hair and comb our teeth? You see what I mean? Anyways...on to something I do have a handle on...family dinners!

Today's item is a beef roll up. It's a hearty dish that will fill you up and it qualifies as comfort food. Soft biscuit dough and warm beef covered in a creamy cheese sauce. Yes, Please! This recipe was one of my mom's go-to recipes for weeknight dinners and it has become one of mine too. It has a few extra steps but it's really quite quick and easy. If you prefer you can use bisquick for the biscuit dough and save a bit of time. I like my homemade baking powder biscuit dough. It's super soft and flaky. Serve with green beans and you have a full meal.

Main Ingredients

For filling:

2 lbs ground beef

can of mushroom soup

salt and pepper

 

For biscuit dough:

2 cups all purpose flour

1 tbsp sugar

1 tsp salt

4 tsp baking powder

1/2 tsp cream of tartar

1/2 cup cold butter

1 cup milk

 

For cheese sauce:

1 tbsp butter

1 tbsp flour

1 cup milk

1/2 tsp dry mustard powder

1 cup shredded cheddar cheese

salt

 

Preparation

Step 1: Scramble fry the ground beef in sauce pan until no pink remains. Season with salt and pepper.

Step 2: Remove from heat and add one can of mushroom soup. Mix well and set aside.

Step 3: Preheat oven to 350 F.

Step 4: Make the biscuit dough. To begin add all the dry ingredients to a bowl. Mix well.

Step 5: Cut in butter and blend with a pastry blender until dough has a crumbly look.

Step 6: Add milk and mix. The dough should be wet but not sticky. If it feels sticky add a bit more flour.

Step 7: Turn dough onto floured surface and roll with a rolling pin. You want the dough in a rectangle shape roughly the size of your 9x13 pan.

 

Step 8: Place dough in the bottom of your greased pan or cookie sheet. You will need to lift it very carefully up and onto the pan so it doesn't split. It's ok if its bigger than the pan at this point because we will be folding it over in the next step.

Step 9: Place beef mixture down the centre of the dough along the length of the pan.

Step 10: Fold the bottom ends of the dough over first, then the long ends over...kind of like folding up a burrito. Pinch the dough along the seams to seal.

Step 11: Bake for 20-30 minutes until dough is golden brown.

Step 12: While this is baking prepare your basic cheese sauce.

Step 13: Melt 1 tbsp of butter over low heat. Remove from heat and whisk in 1 tbsp flour. Add milk and blend.

Step 14: Put back on medium-high heat and bring to boil whisking constantly. Add dry mustard and salt.

Step 15: Remove from heat and sprinkle shredded cheese on top. Allow to sit for about 5 minutes to melt the cheese.

Step 16: Once the cheese is melted whisk it in to incorporate.

Step 17: When the beef and biscuit is done in the oven allow to cool for about 10 minutes.

Step 18: Slice into loaf style pieces and drizzle with cheese sauce.
