Flapper Pie
Did you know Flapper Pie is a traditional Canadian Dessert? More specifically a Canadian Prairies Dessert. Sweet graham cracker crust, smooth custard filling and a rich meringue topping...seriously delicious. This is another one of those recipes that always makes me think of harvest time and eating meals in the field. This is one of my favourite desserts of all time! If you haven't heard of it or tried it before... today is the day! You will thank me I promise. You can make a smaller version in a pie plate, I know it's called Flapper Pie, but I always make this recipe and put it in a 9x13. One pie just isn't enough for us anymore.
Main Ingredients
For crust:
3 cups graham cracker crumbs
1/2 cup white sugar
2/3 cup butter, softened
For custard:
1 cup white sugar
4 tbsp corn starch
2 tbsp flour
1 tsp salt
4 cups milk
4 Egg yolks
1 tbsp butter
1 tsp vanilla
For meringue:
4 Egg whites
1/2 cup white sugar
Preparation
Step 1: Preheat oven to 350F
Step 2: Mix graham cracker crumbs with sugar and butter. Spread in the bottom of 9x13 pan.
Step 3: Bake for 10 minutes.
Step 4: Mix sugar, flour, cornstarch and salt in medium sauce pan. Stir in milk gradually. Cook over medium heat, stirring constantly until milk comes to a boil. Add a few tablespoons of hot milk mixture to beaten egg yolks. Mix well. Add egg mixture to saucepan and stir. Boil until mixture thickens.
Step 5: Remove from heat and add butter and vanilla. Allow to cool.
Step 6: Pour custard over graham crumb crust.
Step 7: In a clean bowl beat egg whites until soft peaks form. Slowly add sugar until mixture is stiff and glossy. Gently ladle over custard. Spread with spatula.
Step 8: Bake at 425F until meringue is golden. Approx. 5 minutes.
Step 9: Allow to cool. Serve warm or cold!
