Black bean Hassleback Chicken

Looking for a quick idea for supper tonight? This chicken is easy to prepare and super delicious. Lots of melty cheese and the delicious addition of black beans and taco seasoning. Serve with mexican rice or fried potatoes and a salad. This dish looks fancy and the chicken is juicy and seasoned. Mouth watering yet? Give this one a try tonight!

Main Ingredients

8 medium sized chicken breasts

3 tbsp olive oil

2 tbsp taco seasoning

1 can black beans

1 cup monterrey jack cheese

1 cup cheddar cheese

 

Preparation

Step 1: Preheat oven to 375F

Step 2: Place partially thawed chicken breast on a cutting board. Slice each chicken breast 3/4 of the way through. Slice each piece of meat 5 or 6 times making cuts about 1 inch apart. This gives it the hassle back look and allows the flavours to get into the middle of the meat.

Step 3: Sprinkle each chicken breast with olive oil and taco seasoning.

Step 4: I prefer to use my hands for this step. Rub the oil and taco seasoning thoroughly into each piece of chicken. Make sure to get the seasoning down into the slices that you made.

Step 5: Place 1 can of black beans in the blender. Blend until mixture is pureed.

Step 6: Pour beans over chicken making sure to cover each piece.

Step 7: Cover with foil and bake for 35 minutes.

Step 8: Remove pan from oven, and remove foil. Sprinkle cheese over chicken and place back in the oven, uncovered.

Step 9: Bake for another 10 minutes.
