Donair

Ever tried a donair? If you are not familiar with them it is a wrap made popular in Atlantic Canada. Traditionally the meat is roasted on a spit and shaved off in careful, thin layers. The slightly spicy meat is then wrapped in a pita with sweet sauce, red onion, mozzarella cheese and tomato. There are plenty of Donair places around in Canadian cities and lots of places make a donair pizza. They are fairly simple to make at home so give it a try! I recommend making the meat a day ahead and refrigerating overnight. 

Main Ingredients

2 lbs lean ground beef

1 cup bread crumbs

1 tbsp pepper

1 1/2 tsp cayenne pepper

3 tsp paprika

2 tsp onion powder

1 tsp garlic salt

1 tsp salt

 

For donair sauce:

1 can sweetened condensed milk

5 Cloves minced garlic

1/4 cup vinegar

1/4 cup mayonnaise

1 tsp salt

 

For donair:

pita bread

mozzarella cheese

sliced tomatoes

diced red onion

 

Preparation

Step 1: Note: The meat for donair is best if cooked the day before and refrigerated.

Step 2: Preheat oven to 300F.

Step 3: Add all the spices to the meat. Blend together or knead by hand. You need to do this for several minutes to make sure all the spices are incorporated.

Step 4: Place the beef onto a cookie sheet and shape into a log.

 

Step 5: Place in the oven at 300F for 2 hours. Cook longer if necessary, depending on your oven. Cook until no pink remains.

Step 6: Once the meat is cooked allow to cool. Wrap the meat and leave it in the fridge overnight. When you are ready to eat take the meat out of the fridge and thinly slice.

 

Step 7: For the Sauce:

Step 8: Mix together the milk, salt, mayo and vinegar. Add minced garlic.

Step 9: To assemble the donair: Take a pita wrap, spread sauce on the bread. Pile high with meat, cheese, tomatoes and onion.
