Nutty Protein Balls
There are quite a few recipes floating around for protein balls, most of them are no bake. I came up with this recipe that you actually bake. The reason I wanted to bake them is so that they would last longer. That way we can take them in an airtight container while we travel. This weekend we are headed back to the rocky mountains for some hiking and scrambling. We need lots of high protein snacks to take along to give our bodies the fuel it needs. The snacks need to be light, keep well and not squish too easily. I also made a double batch of Sweet and Salty Granola.
Between that and some beef jerky I could hike all day! These protein balls are a great snack anytime tho, make up a batch and enjoy!
Main Ingredients
1 cup rolled oats
1/2 cup natural peanut butter
1 tbsp chia seed
1/2 cup shredded coconut
1/2 cup coconut flour
1/4 cup peanut flour
1 scoop protein powder
2 Eggs
1/3 cup maple syrup
cinnamon
1/2 cup dark chocolate chips
Preparation
Step 1: Preheat oven to 350F
Step 2: Mix all ingredients in a bowl.
Step 3: Roll into balls and place on a cookie sheet.
Step 4: Bake for 10 minutes.
