Chicken Lasagne

Who feels like chicken tonight? We do!! This is one of my favourite recipes for family dinner, especially if we are having company. Everyone who tastes it loves it! It's also great for serving company because it can be made ahead of time, kept in the fridge and cooked right before eating. I have even made it up to adding the mozzarella cheese and froze it for future use. Serve it with garlic toast and a fresh salad for a complete meal!

Main Ingredients

9 lasagne noodles

2 pkg knorr hollandaise sauce mix

1 can mushrooms

2 cups asparagus tips

3 chicken breast

1 medium onion

1 tsp onion salt

2 tsp parsley

2 cups shredded mozzarella cheese

 

Preparation

Step 1: Preheat oven to 350F.

Step 2: In a large pot of boiling water cook lasagne noodles until soft.

Step 3: Once noodles are soft drain and rinse with cold water. Set aside.

Step 4: Dice onion and sauté in butter in a heavy saucepan until soft. Add mushrooms and cook another 3-5 minutes. Set aside.

Step 5: Dice chicken breast and cook in fry pan until no pink remains. Add asparagus tips.

Step 6: Continue cooking for 5 minutes until asparagus is soft.

Step 7: Sprinkle with onion salt and parsley.

Step 8: In a pot cook hollandaise sauce according to package directions.

Step 9: Grease a 9x13 casserole dish or lasagne pan.

Step 10: Spread a thin layer of hollandaise sauce on the bottom of the pan. Place a layer of noodles (3) over the sauce.

Step 11: Next spread another thicker layer of hollandaise sauce over the noodles. Spread mushroom and onion over top the sauce.

Step 12: Next place another layer of noodles over the mushroom and onion. Spread hollandaise sauce over top.

Step 13: Spread chicken and asparagus over the sauce.

Step 14: Add one more layer of noodles and the remaining hollandaise sauce.

Step 15: Cover with tinfoil and bake in the oven for 30 minutes.

Step 16: Remove foil and sprinkle with mozzarella cheese. Place back in the oven another 10 minutes.

Step 17: Broil just before serving for that golden cheese look!
