Chicken Cordon Blue

Here's a chicken recipe that the whole family will love! My kids couldn't get enough of this one. You can serve it with or without the sauce, either way it's delicious! Make sure your chicken is at least partially thawed to begin with. If the chicken breasts are thick I recommend slicing them in half to make a thinner cut of meat. This makes them easier to work with and they cook quicker too.

Main Ingredients

5 or 6 chicken breast fillets

6 Slices of ham

swiss cheese

4 Eggs 

3 tbsp water

1 cup flour

seasoning salt

2 cups bread crumbs

 

cheese sauce:

3 tbsp butter

3 tbsp flour

1/2 cup milk

1/2 cup chicken broth

1/2 tsp garlic salt

1 tsp dried parsley flakes

1 cup grated parmesan cheese

 

Preparation

Step 1: Preheat oven to 350F.

Step 2: Take the chicken breast fillets place one at a time into a large ziplock bag.

Step 3: Tenderize them with a meat tenderizer or heavy rolling pin.

 

Step 4: In a small bowl beat 4 eggs and add 3 tbsp water.

Step 5: In a separate bowl place bread crumbs and 1 tsp seasoning salt.

Step 6: Place flour in a separate bowl.

Step 7: Place chicken breast flat out on a cutting board.

Step 8: Place one slice of ham and one slice of swim cheese on top.  I used leftover roast ham in this recipe and it worked really well as long as you slice it thin. Otherwise you can use sliced deli ham.

 

Step 9: Roll up and secure with a toothpick.

Step 10: Coat with flour, then dip in egg wash and cover completely.

 

Step 11: Coat in bread crumb mixture and place in casserole dish.

 

Step 12: Repeat with each chicken breast.

Step 13: Bake uncovered for 30-40 minutes.

For Cheese sauce:

Step 14: In a heavy saucepan over medium heat melt butter.

Step 15: Remove from heat and add flour, whisk to incorporate.

Step 16: Add milk and chicken broth and return to heat.

Step 17: Bring to boil stirring constantly.

Step 18: Add garlic salt and parsley. Remove from heat.

Step 19: Sprinkle parmesan cheese evenly over sauce and allow it to melt.

Step 20: Once the cheese is melted stir well until sauce is smooth and creamy.

Step 21: Drizzle over baked chicken just before serving.
