Brownie Cheesequake
Fresh, smooth, chocolatey cheesecake...who wants a bit? I know I do! I love cheesecake. Any time I am out to eat and cheesecake is a menu option you can be sure that's what I will order. I love to bake cheesecake too. This recipe is one of my favourites. With brownie pieces, rich chocolate sauce and smooth creamy cheesecake, it will soon be your favourite too!
You can buy your brownie bites or make them using your favourite brownie recipe. In a later blog post I will share my favourite brownie recipe with you. For the purposes of this recipe though let's just assume we bought the brownie bites.
Main Ingredients
1 1/2 cup oreo baking crumbs
1/3 cup butter
3 pkg cream cheese ( 8oz)
3/4 cup sugar
3 Eggs

For chocolate sauce:
1 cup semi sweet chocolate chips
1 cup heavy cream
1 tsp vanilla
Preparation
Step 1: preheat oven to 350 F
Step 2: In a microwave safe bowl melt 1/3 cup butter.
Step 3: Add Oreo baking crumbs and and mix well. Press mixture into the bottom of a greased 9 inch springform pan. Set aside.
Step 4: Take all 3 pkg of cream cheese and cut into 1 inch pieces. Add the pieces to a bowl and beat with electric mixer. The secret to having smooth cheesecake is to beat the cream cheese well before adding any other ingredients.
Step 5: Add sugar and eggs and beat well. The mixture should be very smooth with no lumps remaining. Pour over Oreo crumb base.
Step 6: Take 1 1/2 cup brownie pieces and crumble them well. Spread on top of the cheesecake and with the back of a wooden spoon slowly press them into the cake. Smooth the batter.
Step 7: Bake for 35-45 minutes. A cheesecake is done when the outside edge is starting to turn golden brown and the centre is firm. It is ok if there is some cracking in the cake once it bakes.
Step 8: While cake is baking add heavy cream to sauce pan. On low to medium heat bring the cream to a boil stirring constantly. Add chocolate chips and continue to stir until all the chocolate is melted and incorporated.
Step 9: Remove from heat and add vanilla.
Step 10: Once the cake is cooled take a sharp knife and separate the cake from the edge of the pan. Open the sides of the pan and remove the outer edge.
Step 11: Drizzle chocolate sauce over the cake. Garnish with more brownie pieces and Oreo crumbs if desired.
