Rhubarb Muffins

It's rhubarb season! Such a beautiful and delicious time of year. I love the tart taste paired with sweet desserts. The combination is fabulous! If you have never tried baking with rhubarb this is the time to start. These muffins are moist and fluffy with just the right amount of sweetness. bring on the rhubarb!

 

Main Ingredients

2 cups all purpose flour

3/4 cup sugar

2 1/2 tsp baking powder

1 tsp ground cinnamon

1/2 tsp salt

1 cup sour cream

1/2 cup buttermilk

1/4 cup softened butter

1 tsp vanilla

2 Eggs 

1 1/2 cups diced rhubarb

3 tbsp sugar and 1/2 tsp cinnamon for the topping

 

Preparation

Step 1: Preheat oven to 400F.

Step 2: Wash and dice rhubarb.

Step 3: Place dry ingredients in a bowl and mix well.

Step 4: In a separate bowl blend butter, eggs, sour cream and buttermilk. Add vanilla.

Step 5: Add wet ingredients to dry and stir just to incorporate. Batter will be lumpy.

Step 6: Add rhubarb and mix in gently.

Step 7: Grease a muffin tin and fill 3/4 full with batter. Sprinkle top with sugar and cinnamon mix.

Step 8: Bake for 18-20 minutes.
