Oven Roasted Chicken and Brown Butter Pasta
MMM...Oven roasted chicken! Here's a meal almost everyone in our house enjoys! Super easy for a busy weeknight. Just pop that chicken in the oven and have dinner on the table in about 40 minutes! We served our chicken with brown butter pasta. If you have never heard of this before you are in for a treat! My Great Grandmother used to make it so it is a recipe that has been passed down from her. If you have never browned butter before don't be intimidated, it's quite easy! I will explain in more detail later.
Main Ingredients
10 chicken drumsticks
seasoning salt
olive oil
1 Box pasta
1/2 cup butter
sour cream
Preparation
Step 1: Preheat oven to 4ooF.
Step 2: Place tinfoil over a cookie sheet. Lightly coat chicken drumsticks with olive oil. Sprinkle generously with seasoning salt.
Step 3: Bake in the oven for 30-40 minutes.
Step 4: Meanwhile place pasta in boiling, salted water. Continue boiling over medium heat until pasta is soft.
Step 5: In a small skillet over medium heat melt the butter. Allow the butter to brown. To do this melt the butter in your skillet. Without stirring allow the butter to continue cooking until it starts to bubble and starts to turn brown. Stir the butter and repeat a second time, allowing it to rise and bubble. It will turn dark brown this time. Then it's ready!
Step 6: Strain the pasta. Place in serving bowl and pour butter over top. Stir to coat.
Step 7: Serve pasta with chicken and a dollop of sour cream on top.
