Whoopie Pies
As the weather warms up it seems we are busier than ever! I love the warm weather and the change of the seasons. When the weather warms up I like to pull out recipes for desserts that include whip cream. These Whoopie pies deliver! They take a bit longer to make but the results are worth it. Rich whipping cream sandwiched between two soft, chocolate cookies! Make a double batch if you like because they won't last long!
Main Ingredients
1 Box chocolate cake mix
4 Eggs
1/2 cup water
1/2 cup vegetable oil
1 pkg chocolate pudding powder
473 ml carton whipping cream
1/2 cup white sugar
Preparation
Step 1: Preheat oven to 375F.
Step 2: With a stand up mixer blend cake mix, eggs, water and oil. Mix for 2 minutes on medium speed.
Step 3: Add dry pudding powder and mix well.
Step 4: Place parchment paper on a cookie sheet and scoop batter by tablespoon onto sheet. With a wooden spoon gently spread until the dough drop is in a circular shape.
Step 5: Bake for 10 minutes.
Step 6: Cool on wire rack.
Step 7: While cookies are cooling, whip cream with sugar. You want to whip the cream until it is quite firm.
Step 8: Scoop whipped cream onto a cookie and place another cookie on top.
Step 9: Keep refrigerated until ready to serve.
