Salmon Coulibiac

Everyone knows eating salmon is good for you, right? Getting the kids to eat salmon is sometimes not as easy! This recipe is a traditional Russian dish where the salmon is wrapped in puff pastry and baked in the oven. The result is a super moist, flaky salmon with a crunchy, savoury crust. I think it's going to be one of my new favourites!

Main Ingredients

puff pastry - thawed

2 lbs salmon fillet

2 tbsp butter

1 cup chopped onion

2 cups fresh mushroom slices

1 cup sour cream

1 tsp dill weed

1/4 cup chopped fresh chives

2 hard boiled eggs

1 Large egg for egg wash

salt

pepper

 

Preparation

Step 1: Preheat oven to 425F

Step 2: Melt butter in sauce pan. Sautee onions until soft.

Step 3: Add mushrooms and sauté until cooked.

Step 4: In a sperate bowl mix sour cream, chives, dill and salt and pepper.

Step 5: Roll out puff pastry sheet on floured surface until it is wider and longer than your salmon fillet by about 2 inches.

Step 6: Place puff pastry on greased cookie sheet and lay salmon in the middle.

Step 7: Spoon sour cream mixture over the salmon and spread evenly.

Step 8: Sprinkle onions and mushrooms over top.

 

Step 9: Finely chop the hard boiled eggs and sprinkle over mushroom and onion.

Step 10: Gently fold the side of the pastry nearest to you up over the salmon.

Step 11: Repeat with the short ends and last the far end folds over towards you. The whole salmon would be covered.

Step 12: Wet the tips of your fingers and dampen the edge of the pastry to seal.

 

Step 13: In a small bowl whisk egg with 1 tbsp water. Brush the top of the pastry with egg mixture. Sprinkle with paprika and more dill weed.

Step 14: Bake at 425F for 10 minutes. Reduce oven temperature to 350F and cook an additional 20-30 minutes. Pastry should be golden brown.
