Brownie Truffles

In case you are running late with your Christmas baking, here is an easy one you can make last minute. They taste amazing and they look fancy. This was a new one that I tried this year. Truth be told I haven't done as many christmas items this year as my oven is not working properly. Baking in my oven has become a precarious balancing act of trying different temperatures, racks and recipes! Not to worry tho! My new oven is sitting in the garage and will be hooked up as soon as my wonderful husband gets the piping in. It's a lovely, natural gas stove and I am very excited to try it out!

Meanwhile we are getting lots of use out of our slow cooker and I have carried my ingredients over to my mothers and done my baking there a time or two;) For these I did bake the brownies over at my moms then brought them home to do the finishing stages. Hope you enjoy!

Main Ingredients

1 cup all purpose flour

2 cups sugar

4 eggs 

1 cup powdered cocoa

1 cup butter

2 cups chocolate chips

 

Preparation

Step 1: Preheat oven to 350F.

Step 2: Soften butter and place in mixing bowl. Add sugar and egg and beat well.

Step 3: Add flour and cocoa powder and blend until smooth.

Step 4: Spread into greased 9x13 pan.

Step 5: Bake for 20 minutes. Remember brownies do not follow the rule of cakes for a clean toothpick. If you check a brownie by inserting a toothpick it will come out with some batter on it. Just check brownie for consistency of the batter and the top should look cooked. This way you will have a dense, chewy brownie, not a dry one.

Step 6: Allow brownie to cool. Scrape brownie out of pan and into mixing bowl. Crumble it with your hands.

Step 7: Form brownie into firm balls and place on wax paper. Refrigerate for 30 minutes.

Step 8: Remove brownie balls from fridge. In a double boiler, melt chocolate chips. With a spoon drop each ball into the chocolate, turning to coat. Place on wax paper.

Step 9: Repeat with each one. You can decorate the truffles by adding dark chocolate flakes, drizzling white chocolate or adding chopped nuts.

Step 10: Refrigerate until ready to serve.
