Battered Fish
We have just returned from a fabulous family vacation down to Florida. We packed 8 of us into a motor home and drove 9000 km. We saw DisneyWorld, Kennedy Space Centre, the Everglades and spent 3 beautiful days on a beach at Sanibel Island. White sand, seashells, warm ocean water...and fresh seafood! ( you knew it had to come back to food eventually;)). One night my Husband and I went out to eat at a local seafood bar. I had battered oysters and they were amazing...like melt in your mouth amazing! I came home with a renewed purpose to include more seafood in our lives. While we don't get too much fresh seafood around here on the Prairies, my son did catch us quite a few tasty Walleye this summer. I dug those out of the deep freeze and I made this battered fish recipe. It was amazing! I hope you enjoy it as much as we did!
Main Ingredients
6 fish fillets, cod or other
2 cups flour
2 tsp salt
1/4 cup cornstarch
1 tsp onion powder
1/2 tsp baking powder
1/2 tsp baking soda
1 cup gingerale or club soda
dill
oil for frying
Preparation
Step 1: Defrost fish fillets. Cut into thirds. I used Walleye fish for this recipe.
Step 2: If you are using a deep fryer begin to heat it. If you don't have one place a heavy pot or sauce pan on the stove and fill1/3 full with oil. Heat to medium temperature.
Step 3: In a mixing bowl mix all dry ingredients.
Step 4: Add gingerale and stir. Batter should be slightly thicker than pancake batter. If it's too thick add more gingerale.
Step 5: Test your oil by dropping a small amount of batter by teaspoon into the oil. If it sizzles and bubbles but does not smoke it is ready!
Step 6: Coat each fish fillet in batter and drop into hot oil. Cooke 2-3 minutes per side.
Step 7: Drain on paper towel or wire rack. Serve immediately. Goes well with fried potatoes, coleslaw and of course..tartar sauce.
Step 8: Fry fish in small batches so they don't stick together.
