Soft, buttered crepes filled with cheese and covered in cream and dill, these Ukranian crepes are deliciousness in every bite! A multi step process is required to bring these crepes to the table. They are so good and so addicting! Last time I made them I doubled the recipe and we still didn't have any leftovers! They are that good!
Try your hand at these crepes, you won't be disappointed!
Main Ingredients
For the crepes:
4 Eggs
1 cup milk
1/2 cup water
1 cup flour
salt
For cheese filling:
2 cups cottage cheese
2 Egg yolks
2 tbsp heavy cream
1 tbsp fresh dill
For top:
1/2 cup butter
4 tbsp cream
Preparation
Step 1: In a bowl beat eggs until blended and frothy. Add milk, water, flour and salt. Beat well.
Step 2: In a small, round sauce pan place 1/4 tsp butter. Heat to medium.
Step 3: Ladle a thin amount of batter over pan. Swirl the pan slightly so the batter covers the whole bottom of the pan. After 1 minute flip crepe over. It should be light and toasty.
Step 4: Continue cooking crepes until all batter is gone. You will need to add butter in between batches.
Step 5: Preheat oven to 350F.
Step 6: In another bowl mix egg yolks, whipping cream,cheese, salt and dill. I use my hand mixer for this.
Step 7: Spread one crepe out and place cheese mixture inside. Gently roll it up.
Step 8: Slice crepe down the middle and place in a foil lined baking dish.
Step 9: Repeat until all the crepes are gone.
Step 10: Melt butter and mix with cream.
Step 11: Drizzle over the crepes.
Step 12: Bake covered for 30 minutes.
