Corn Fritters
Do you have certain recipes that make you think of a particular season or a specific person? I do! I am thankful to have a handful of recipes passed down by my Grandmothers to my mother and then to me! I love them all and I enjoy how when I pull out the recipe it brings back memories. This recipe was made by my Grandma Taylor and it always makes me think of Fall. Likely she was looking for things to make with the corn from her garden and these fit the bill! Delicious, savoury dough, filled with corn and deep fried to perfection. A great addition to a meal with fish or chicken.
Main Ingredients
2 cup all purpose flour
1 tbsp baking powder
1 tsp salt
2 tsp white sugar
2 eggs
1 1/4 cups milk
1/4 cup butter softened
2 cups cooked corn
oil for frying
Preparation
Step 1: To begin pour your oil into a heavy pot and begin to heat. Oil needs to be about 370 F before you can deep fry your food.
Step 2: In a medium sized bowl combine flour, baking powder, salt and sugar. Stir and add corn kernels. Once the corn is added stir again to coat the corn.
Step 3: In a separate bowl beat eggs, milk and butter. Add to dry ingredients and mix well.
Step 4: Once oil is heated drop batter by tablespoon into hot oil. Fry until golden brown on all sides, takes about 5 minutes.
Step 5: Remove with heavy slotted metal spoon onto paper towel. Serve immediately.
