Low Carb Pizza
Bringing in the New year with some good news! If you are trying to be healthier this year you will be pleased to know you don't have to give up pizza night! There are days where the battle to choose healthy food items can seem daunting. It can seem like all you are doing is giving up the things you love to eat. I know the feeling...it's discouraging. Eating this pizza makes me feel like i'm having a cheat day even when I am not. Whatever plan you are on this recipe can be adapted to fit and you can eat a warm, cheesy pizza without the guilt. Even my kids love this one;)
Low Carb Pizza
Main Ingredients
1 head of cauliflower
1 cup mozzarella cheese - grated
1 egg
2 tsp italian seasoning
1 tsp garlic salt
pizza sauce
Toppings for pizza:
salami
sun dried tomatoes
black olives
Preparation
Step 1: Chop cauliflower and place in a medium pot. Bring to boil. Reduce heat and simmer until vegetable is soft when pierced with a fork.
Step 2: Drain cauliflower. Either mash or chop in your blender. Press cauliflower until all the liquid has been removed.
Step 3: Preheat oven to 350F.
Step 4: Allow cauliflower to cool. Once it has cooled add 1/2 cup mozzarella cheese, egg, seasoning and salt. At this stage I like to mix the dough with my hands until it has a nice, smooth consistency.
Step 5: Spread onto a round pizza pan. Bake for 15 minutes or until golden brown.
Step 6: Remove pizza crust from oven.
Step 7: Spread with pizza sauce, desired toppings and the remaining mozzarella cheese.
Step 8: Bake for another 15 minutes.
