Pineapple Rice
Well summer is definitely here! We are in the middle of a beautiful heat wave. Summer heat makes me think of BBQ's and tropical fruit. Try this one with any meat you throw on the grill! A delicious side dish! This rice is sweet and flavourful and it goes especially well with any chicken dish.
Main Ingredients
2 cups uncooked jasmine rice
1 can diced pineapple pieces
2 tsp yellow curry
2 tbsp coconut oil
1 1/2 coconut milk
1 1/2 cups water
2 Cloves garlic
2 tbsp lime juice
1 green onion diced
Preparation
Step 1: In a medium size pot bring water, curry powder and coconut milk to boil.
Step 2: Add rice and reduce heat to simmer. Cook covered until rice absorbs all the moisture.
Step 3: Meanwhile in a saucepan sauté the garlic and green onion. Drain pineapple and add to sauce pan. Cook 3-5 minutes.
Step 4: Once rice is cooked add coconut oil to sauce pan. Add rice and sauté for 3 minutes, stirring occasionally.
Step 5: Add cooked pineapple mixture to rice. Mix the vegetables in with the rice.
Step 6: Serve as a side dish to chicken.
